Lingonberry jam is a staple food in Scandinavian cuisine. It is very versatile and can be served with with oven-made thick pancakes, as well as a relish with meat courses such as meatballs, beef stew or liver dishes; regionally even with fried herring. It is also often used on mashed potato and the traditional oatmeal porridge, sometimes together with cinnamon, and, perhaps, a little sugar or syrup. You candollop it on Greek yoghurt or toss it into fruit salads. It's also wonderful mixed with a little buttercream as a macaroon filling. Or mix some into a blueberry muffin batter for a delicious taste twist!
